Bobby's culinary journey began when the owner of Joe Allen restaurant was impressed with his skills and paid for his education at the French Culinary Institute. He graduated in 1984 and started as a sous-chef before working as a chef for Jonathan Waxman at Bud and Jams restaurant.

After a brief stint in the stock exchange business, Bobby returned to the kitchen and became the executive chef at Miracle Grill. He then joined Mesa Grill as an executive chef and eventually became a partner when it opened on January 15, 1991.

In November 1993, Bobby opened his first restaurant, Bolo Bar & Restaurant, and went on to open several other Mesa Grill restaurants across the US, including one in Las Vegas that received a Michelin star, only to lose it a year later.
